After the harvest, at Piè di Costa is the time to begin harvesting olives. November is the time when the olives reach perfect ripeness. The olives are harvested by hand or using a special tool and made to fall on a net lying at the foot of the olive tree. Here are grouped together, separate from the leaves and put into boxes, ready to be transported to the mill for the production of the Extra Vergine oil of olive. In Piè di Costa estate there are about 400 olive trees of different varieties like the “frantoio”, “Moraiolo “, and” Leccino” that are typical kinds of olives groves in Tuscany. For that reason the the Extra Vergine oil of olive of Piè di Costa is a mixture of olives of different quality that ensures a unique and unmistakable flavour as well as a deep green colour. September is arrived and like every year figs and grapes are ready to be collected. The nature and its cycles is punctual and surprising: gives the fruits of his land with generosity and love. First fruits of autumn like figs are a joy to see but above all to eat. Accompanied with the salami is one of the best dishes of traditional Tuscan cuisine. But they are also good with pecorino cheese and ham, or even by themselves after a meal. In agriculture, every period of the year is important to make different works to get a good crop. In particular, march is the best month for pruning olives trees. Pruning consists in cutting branches that has already made olives the year before. In this way the olive trees will grow up better and stronger, and after the blossoming (between may and june) the plant will make olives until the harvest usually between the end of October and first days of December. In Piè di Costa which estate is 12 hectares large, there are 500 olive trees that are preparing an excellent Extra Vergine Oil of Olive

After the grape’s harvest, it’s the time to harvest the Olives. At Piè di Costa, where there are approximately 500 olive trees, has beed harvested 4000 kg of Olives. Andrea and his staff are working hard to make an excellent Extra Virgin Oil of Olive.

Like every year, in the period between September and October, in Piè di Costa is usual to harvest. Piè di Costa is an estate of 12 hectares cultivated with Chianti vineyards and olive groves.
This year, a sunny climate and high temperature, - in particular during the months of June, July and August - has advantaged the growing of grapes with an excellent level of sugar (from which depends alcoholic degrees) in addiction to a general high quality.
This period, is one of the most important in the coutrylife, and represent for our guests, an unique opportunity to experience the production of Chianti wine. As said from some of our guests, they have enjoyed to help Andrea and his staff in grape-picking.
